Espresso chicken sandwich

Chicken with coffee and BBQ sauce is the combination. Make this into a sandwich with toasted brioche, tropical jalapeño salsa, pancetta and cabbage salad. What do you need?

4 chicken thighs with skin

2 dl The bastard Signature sauce

The Bastard Lucifer's delight rub

8 slices of pancetta

1 red jalapeño pepper

1/4 pineapple

1/2 mango

1 lime

Olive oil

1/2,pointed cabbage

2 tbsp crème fraiche

2 tsp mustard

4 thick slices of white or brioche bread

Butter

2 tomatoes in slices

Preparation method

For the chicken thighs:

Preheat the oven to 180 degrees.

Remove the skin from the chicken thigh and marinate the meat with the rub.

Scrape the chicken skin clean with your knife and place it on an oven tray with baking paper. Place another sheet of baking paper on top of this. Bake the skins in the oven for 20 minutes.

Lay the skins on a tea towel or paper to drain and sprinkle with rub.

 

Espresso bbq sauce:

Put the espressos in a pan and reduce to 2/3 . Let the coffee cool down and stir it into the bbq sauce.

 

Tropical Jalapeño salsa:

Cut the pineapple and mango into small cubes. Halve the jalapeño pepper, remove the seeds and cut finely. Mix everything together with the juice of a squeezed lime and olive oil and season with salt and pepper.

 

Crème fraish cabbage salad:

Remove the core from the cabbage and cut the cabbage very finely. You can also use a mandolin for this.

Mix the cabbage with crème fraiche and mustard. Season the salad with salt and pepper.

 

Finish:

Grill the chicken thighs

Spread the bread slices on both sides and roast them until golden brown.

Fry the Pancetta slices

 

Spread the rolls with the cabbage salad and put the tomato on top.

Top with the Espresso bbq chicken and a spoonful of the salsa. Top the sandwich with Pancetta and the crispy chicken skin!
