REQUIREMENTS:

Mortar and pestle or magimix

1 The Bastard

INGREDIENTS:

1 whole, fresh chicken

4 garlic cloves

1 piece of ginger

5 spring onions

2 tbsp. thyme

2 madame jeanette peppers

1 tsp black pepper

1 tsp allspice granules

2 tsp grated nutmeg

kosher salt to taste

2 limes

2 tbsp. tomasu madame jeanette soy sauce

Preparation method

  1. Butterfly/cut open the chicken.
  2. Mix and pound all ingredients in a mortar or grind in a magimix and marinate the chicken for 1 to 24 hours.
  3. Use all the spices on the chicken so that the flavors are well absorbed.
  4. Heat The Bastard and use two temperature zones.
  5. Grill the chicken and cook it at a lower temperature, playing with the heat and looking for a nice grilled look. It is important that the chicken is not overcooked, it should still be juicy and tender.
  6. Slice the chicken with a sharp knife serve it with some of your own hot sauce for extra spice and acidity.
