Preparation method

Rub the chicken pieces or legs with the selected Grate Goods BBQ Rub. As soon as The Bastard reaches 110 - 120°C, place the chicken on the grill. Slowly cook the chicken in a closed Bastard , turning the chicken every now and then. Depending on the size of the chicken pieces, this will take about 25 minutes. Check whether the chicken has a core temperature of 74°C. Then remove the chicken from The Bastard and let it rest for at least 15 minutes. In the meantime, heat up The Bastard to grill the chicken. Glaze the chicken generously with the Grate Goods BBQ Sauce to taste. Put the chicken back on The Bastard until fully caramelised, adding more sauce if necessary while caramelising. Serve plain with additional Grate Goods BBQ Sauce!
