2 red onions 25 g butter 2 tbsp sugar 2 tbsp balsamic vinegar salt and freshly ground black pepper, to taste 4 tbsp mayonnaise 2 tbsp spicy pimentón (or spicy paprika) 750 g minced beef, at room temperature 2 tbsp soy sauce 2 tbsp Worcestershire sauce 4 tbsp olive oil 8 slices pancetta 4 slices Old Amsterdam 1 large tomato 8 slices rustic, sturdy bread 4 leaves of cabbage lettuce, washed

Preparation method

Cut the onion into rings. Melt the butter in a cast iron pan and fry the onions with the sugar. Allow the sugar to caramelise, deglaze with balsamic vinegar and cook the onions for another 5 minutes on a low heat. Season with salt and black pepper. In the meantime, mix the mayonnaise with the pimentón. Mix the minced meat with the soy sauce and Worcestershire sauce and add salt and black pepper to taste.
