What do you need?

8 slices of sourdough or white casino bread, whatever floats your boat

4 tbsp. butter, plus extra for frying

200 g cream cheese

2 tbsp. mustard

2 tbsp. chives, finely chopped

salt and freshly ground black pepper

2 beef tomatoes, sliced

8 slices of cooked ham

12 fresh eggs

300 g grated cheddar

8 slices of smoked ham

sprigs of chervil, for garnish

Preparation method

Spread the bread slices with the butter and sprinkle salt and pepper.

Grill the sandwiches briefly on both sides on the plancha; they should be crispy on the outside and fluffy on the inside zive.

In a bowl, mix the cream cheese with the mustard and chives, and season with salt and pepper.

Grill the tomato slices and cooked ham briefly on both sides.

Fry 3 fried eggs per person, keeping the yolk liquid.

Sprinkle the eggs with cheddar and let the cheese melt briefly.

Spread each sandwich with cream cheese, divide the tomato slices on top and place a slice of cooked ham and a slice of smoked ham on top.

Top each two slices of bread with three fried eggs and garnish with the sprigs of chervil.
