In America, corn fritters are on the menu at most restaurants. Originally, these savory pancakes come from the South of America. Jord has given this recipe his own twist, which makes it much better than the classic recipe as far as we are concerned.

What do you need?

BBQ cream sauce:

250 g sour cream

100 ml BBQ sauce (such as Smokey's finest)

juice and zest of 2 lemons

2 tbsp. parsley, finely chopped

2 tbsp Chipotle Tabasco

salt and freshly ground black pepper to taste

Bacon corn fritters:

4 corn cobs

1 tbsp. sunflower oil

6 slices of smoked breakfast bacon

2 jalapeño peppers, finely chopped

50 g grated cheddar

3 eggs

1 red onion, finely chopped

120 g flour

½ tsp baking powder

1 tsp garlic granules

1 tsp onion granules

1 tsp smoked paprika

juice and zest of 1 lemon

2 tbsp. sunflower or soybean oil

1/3rd bunch of cilantro, finely chopped

salt and freshly ground black pepper to taste

150 ml of sunflower or soybean oil

Plancha or large skillet

2 large tablespoons or an ice cream scoop

spatula

Preparation method

Make the BBQ-cream sauce by mixing all the ingredients together and seasoning with some salt and freshly ground black pepper. Set aside cold until use.

Prepare a BBQ for direct grilling and heat until a temperature of 180 °C is reached. Brush the corn cobs with oil and grill all around until the kernels are seared and cooked, let cool slightly and cut the kernels off the cobs. Next, grill the smoked breakfast bacon slices crispy and chop them. Next, mix together the remaining ingredients for the corn fritters in a large bowl and stir well. Finally, add the corn kernels and bacon and stir well again.

Heat a plancha or large skillet on the stove and drop in a generous splash of sunflower oil. When the plancha or skillet begins to smoke you can get started. Using an ice cream scooper or two tablespoons, take some of the fritter batter and drain it on the plancha. Depending on the size of the plancha or skillet, you can fry several at a time. The fritter should remain fairly thick, about 1 cm thick. Wait to flip until the top of the fritter begins to dry in, then carefully put a spatula under it and flip the fritter over and fry this side as well until golden brown. Is the bottom of your fritter black before the top dries in? Then you're frying too hot. Doesn't the bottom get a nice brown color but the top dries in? Then you're frying too cold. Repeat the process of adding oil and frying fritters until you run out of batter. Serve the fritters with the BBQ-cream sauce and enjoy.
