What do you need?

For the marinated ribs :
- Rib bites
- Coke (enough to completely cover the ribs)
- Barbecue sauce of your choice
- salt and pepper

For the jalapeño salsa :
- 2-3 jalapeño peppers, finely chopped (adjust amount depending on how spicy you want it)
- 1 red onion, finely chopped
- Fresh coriander leaves, finely chopped
- 1 tomato, diced
- Juice of 1 lime
- Salt and pepper to taste

For garnish:
- Coarsely chopped peanuts

Preparation method

1. Start by marinating the spare ribs. Place the spare ribs in a large baking dish and pour Coke over them until they are completely covered. Add salt and pepper to taste. Let the spare ribs marinate in the refrigerator for at least 4 hours.
2. Heat The Bastard Preheat on indirect heat using The Bastard platesetter. This ensures slow and even cooking.
3. Remove the spare ribs from the marinade and drain them. drain them. Save some of the marinade for later use.
4. Place the spare ribs on the grill (ideally with Bastard grill pins) over indirect heat. Close the grill lid and cook the spare ribs for about 2-3 hours, turning them occasionally, and baking until tender and cooked through. You can occasionally drizzle some of the reserved marinade over the spare ribs for extra flavor.
5. While the spare ribs are cooking, you can make the jalapeño salsa. make the jalapeño salsa. Mix the chopped jalapeño peppers, red onion, tomato and chopped cilantro in a bowl. a bowl. Add the juice of 1 lime and season with salt and pepper.
6. When the spare ribs are done, remove them from the barbecue and cut into individual portions.
7. Serve the spare ribs with the jalapeño salsa on top and garnish with coarsely chopped peanuts.
