What do you need?

1/2 eggplant

24 Medjoul dates

100 g soft goat cheese

12 slices of breakfast bacon, halved

 

For the marinade:

4 tbsp water

1 tbsp maple syrup

1 tbsp olive oil

1 tbsp soy sauce

1 tbsp apple cider vinegar

1/2 tsp cayenne pepper

1/4 tsp smoked paprika

1/4 tsp cumin powder

1/4 tsp salt

 

Further required:

mandolin or cheese slicer

Preparation method

On the mandolin, cut 12 thin, long recipes from the half eggplant.

In a bowl, mix the ingredients for the marinade and place the eggplant strips in it; they should be completely submerged. After 2 hours, remove them from the marinade and pat them dry.

Fill the dates with the goat cheese and wrap half the dates with half a slice of breakfast bacon and the other half with a strip of eggplant.

Thread the dates onto metal skewers, place on the grill of The Bastard and grill the skewers until the cheese begins to melt.
