Sweet Cherry Ribs

Spareribs are usually a finger-licking good. Especially with these ribs with cherry beer sauce. This is a recipe from Tjal Oosterveld. Temperature: Prepare the BBQ for indirect grilling. Fire up the BBQ to 110 degrees Celsius, add 2 chunks of smoking wood.

What do you need?

Seasoning 1 tsp caster sugar 1 tsp freshly ground lemon pepper 1 tsp sea salt 1 tsp granulated sugar 1 tsp onion powder 1 tsp garlic powder 1 tsp mustard powder 1/4 tsp smoked paprika 1/2 tsp chipotle powder 1 tsp oregano 1/2 tsp parsley Sauce 1 bottle of beer 5 tsp granulated sugar 2 tsp Kesenjam 1 tsp soy sauce 1 tsp worcestershire sauce 1 tsp apple cider vinegar 1/2 onion finely chopped 1 clove garlic finely chopped 1 tsp ginger powder pinch of sea salt pinch of freshly ground lemon pepper Spray 150cc apple juice 150cc apple cider vinegar in a spray bottle Meat 2 racks spare ribs

Preparation method

Step 1: Mix the spices and make the spray. Step 2: Skin the spare ribs. Grease them with olive oil, sprinkle with herbs, but not too much! Step 3: Place the spare ribs on the BBQ (indirect) for 1.5 hours and spray every 15 minutes with the spray bottle. Step 4: After 1.5 hours, remove the spare ribs from the BBQ and wrap them in aluminium foil. Spray them well before folding and place them back on the BBQ. Step 5: Start with the sauce by putting the beer and 5 tbsp caster sugar in a pan. Heat it and let it thicken to syrup. Add the remaining ingredients and heat to just below boiling point. Then mash the cherries. Step 6: After 2 hours, remove the spare ribs from the foil and place them back on the BBQ. Brush the spare ribs with the sauce. Do this three times in half an hour. Step 7: Remove the spare ribs from the BBQ and leave to rest for 5 minutes.
