1 thick South American Ribeye of approx. 300 grams Coarse sea salt Herb butter (home made) or ordinary (cream) butter

Preparation method

Remove the ribeye from the packaging and pat it completely dry with some kitchen paper. Rub the ribeye with salt and let it rest for a while. Place the pan on the grill of the barbecue and let it get glowing (!) hot. Place the ribeye in the cast iron pan. Turn the steak after a minute (this varies with the thickness of the steak) and keep checking that it does not burn. Remove the pan with the steak from the barbecue at a core temperature of about 54 degrees for a medium steak. Note that the ribeye will continue to cook on the plate. Tip: Place a knob of (herb) butter on the steak....Enjoy!
