What do you need?

480 grams of flour

2 tsp salt

2 tsp dried yeast

470 ml of water

Butter for greasing

180 ml of olive oil

Preparation method

 

  1. Put flour, salt, yeast and water in a bowl. Stir with a spatula until it becomes a slightly sticky ball. Pour some olive oil over it and spread it over the top of the dough so it doesn't dry out. Cover the bowl and put it in the refrigerator for 18-22 hours.
  2. Preheat the Bastard with indirect two-zone heat to 220 degrees.
  3. Grease the inside of a Cast Iron Fry Pan or Bastard Bread Pan with butter and drizzle some oil in the center. Remove the dough from the refrigerator, pull it off the sides of the bowl and form a ball again. Carefully place the ball of dough in the center of the pan.
  4. Leave the pan untouched (just on the counter, not in the refrigerator) for another 3-4 hours until it has roughly doubled in size.
  5. Drizzle olive oil over the dough again and press straight down into the dough with your fingertips to make 3-4 wells. Add some extra olives, onion or herbs to taste if necessary.
  6. Place the focaccia on the indirect side of the Bastard. Bake for 30 minutes or until the top is golden brown. Remove from grill, slide bread out of pan and let cool on a rack.
