Breakfast Burrito

It may sound a bit like eating 300 grams of minced meat and beans in the early morning. There is something to be said for that, but this Breakfast Burrito is a bit more light-hearted. Think of the tortilla as a Mexican sandwich that you can fold your breakfast into.

Temperature: 200 °C, direct.

What do you need?

freshly ground black pepper, 1 knob of butter, salt to taste, 4 flour tortillas, 8 slices of bacon, 100 g cheddar and Monterey Jack grated, BBQ sauce to taste. Also required cast iron pan.

Preparation method

Making tortillas yourself is very simple. Mix 250 g flour with 170 ml lukewarm water, a pinch of salt and 4 tbsp olive oil. Knead a supple dough and let it rest for 15 minutes. Make a sausage of the dough and cut into 4 pieces. Roll out each ball with a rolling pin in some flour and in a frying pan with some butter into a tortilla. Beat the eggs with the pepper. Put the cast-iron pan over the fire of The Bastard and let it get nice and hot. Melt the butter in the pan and add the egg mixture. Take the pan off the grill for a moment and scramble the eggs. Because of the lower temperature, the scrambled eggs become much creamier. Add some salt to taste. When the eggs are almost ready, place the tortilla in the pan and heat for 30 seconds to 1 minute. In the meantime, fry the bacon. Put the eggs in the middle of the tortilla, followed by the bacon and grated cheese. Finish with some BBQ sauce and roll up the tortilla. Put back for a moment on The Bastard.
