Bad Boy Beef Jerky

You don't have to love football to find the Champions League super exciting. Or take Formula 1 with our Max. And fair is fair, we like Dumoulin just as much. So there are plenty of moments to sit on the sofa, nail-biting, screaming for victory. But it is even better to save your nails and feast on home-made Beef Jerky. See the recipe here.

Temperature: 80 °C, indirect. With a nice amount of smoke.

What do you need?

1 kg of beef (ask your butcher to slice a roll very thinly, against the grain. Or if you want to chew, with the thread). For the marinade 4 cloves of garlic, finely chopped 150 ml soy sauce 50 ml Worcestershire sauce 100 g caster sugar 2 tsp onion powder 2 tsp chilli flakes 2 tbsp freshly ground black pepper 250 ml strong beer Also needed sealable plastic bag grill expander (optional) smoke chips smoker box airtight drum or bag

Preparation method

Mix all the marinade ingredients well and put the mixture in a plastic bag. Then add the meat to the marinade and mix firmly. Let it marinate for at least 8 hours. The longer, the more flavour. Remove the meat from the marinade and pat dry with kitchen paper. It is useful to lay the grill with the meat already full, without it being on the Bastard . Use a grill expander if you need more space or if you are making a double batch. Light The Bastard and keep the temperature very low. Fill the smoker box with smoke dust and place the smoker box on the charcoal. Place the plate setter and meat rack on top. The Bastard. Leave to cook for 2 to 3 hours; the pieces of meat should not be too crispy, but certainly not too meaty. Leave the beef jerky to cool well and store in a dry, airtight drum or bag. This delicious snack will keep for 2 to 3 weeks in the refrigerator (if it is not used up by then). Take the remote control...
