Pizza Quatro Formagi

That moment when you pick up a slice of pizza and get those delicious melted cheese strings; that's what you want, isn't it? But how do you make the perfect pizza base easily? With this recipe, you can't really miss it. Make the dough, let it rise for 3 hours, cover it with tomato sauce and a lot of cheese. Bake the pizza with the Bastard Pizza Rotisserie, as the door of the Pizza Rotisserie keeps the dome closed, thus retaining more heat.

Tip for a crispy base: pre-bake the pizza base without sauce for a few minutes at Bastard. Then top it with the sauce and cheeses and bake again for a few minutes.

What do you need?

10 grams of salt

600 ml lukewarm water

1 kg flour (Tipo 00)

5 grams of dried instant yeast

10 ml olive oil

400 grams of various types of cheese (to taste)

500 ml passata

Preparation method

Dissolve the salt in the water.

Make a ring of the flour and add about half of the water and mix with the flour.

Add the yeast, the remaining water and the olive oil, mix until a dough forms and knead until smooth. (Approx. 10 minutes).

Leave the dough to rise for 30 min to 2 hours under a damp kitchen towel. (At a temperature of around 20°C)

Portion out the dough into equal pieces, round them up and let them rise for another 30 min to 1 hour.

Heat your Bastard with pizza stone rotisserie to 250°C indirectly.

You can now roll out the bases.

Grate different types of cheese as desired or crumble pieces of cheese (Gorgonzolla).

Place the base on your pizza server and spread the tomato sauce evenly on it, sprinkle and crumble the cheese varieties on top.

Heat your pizza/rotisserie to 250°C (with your plate setter/heat shield underneath) and bake your pizza until it is golden brown.
