What do you need?
- 500 g fresh raspberries
- 150 g sugar
- 10 peaches, ripe but firm
- 100 ml cognac
- icing sugar, for garnishing
- mint, for garnish
- Vanilla ice cream, to serve with it
Further requirements - cast iron pan
- blender

Grilled peach is delicious in salads, on a sandwich or as a dessert. Combined with raspberries and ice cream, you get the classic PĂȘche Melba.
Purée half of the raspberries with the sugar into a thick puree using a hand blender.
Do this until the sugar has dissolved. Add the rest of the raspberries and puree. Put away in the fridge.
Cut the peaches in half and remove the stone. Inject the peach with a little cognac.
Place the peach halves on the grill of the The Bastard and grill for about 6 minutes. Remove the skin from the grilled peaches.
Cut the peaches in half again and serve with the raspberry puree. Garnish with icing sugar and mint. Delicious with a scoop of ice cream!
