Ronald Kunis, we know from restaurant Qunis, uses his Bastard for several dishes on the menu. But how to make asparagus from the BBQ on a high level with only 5 ingredients? Don't cook your asparagus in water, but in some water with the peels, butter and mace. That is his secret
12 white asparagus
1 litre of water
20 grams of butter
2 x mace
15 grams of salt
Peel the asparagus, collect the peelings and put them in a pan with water together with the mace, the salt and the butter. Keep the asparagus for a while.
Put the whole thing on the fire and leave it to infuse for 15 minutes.
Then sieve the peels from the asparagus juice.
Then add the peeled asparagus to the asparagus liquid and cook them (depending on their thickness) for about 8 minutes.
Remove the asparagus from the pan, drizzle with olive oil and grill until tender on The Bastard.
Garnish the asparagus on a plate with, for example, lamb's ears, crème fraîche or a soft boiled egg.
