What do you need?

  • 1 piece of salmon fillet of about 400 grams
  • juice of ½ lemon
  • pepper sea salt
  • a few sprigs of dill
  • little sugar

  • The Bastard BBQ Pincers
  • The Bastard Cedar plank
Smoked salmon on cedar wood

Preparation method

Rub the salmon with salt and sugar and for best results, leave overnight. Before smoking, remove the salt and sugar again. Place the cedar plank* with the salmon on it The Bastard and close the lid. Smoke the salmon for about 60 minutes at 100°C. When the fish is just barely glazed you can remove it from the bbq. While smoking, pat off solidified egg whites with kitchen paper. Drizzle the lemon juice on the salmon and season with pepper and sea salt. Finally, garnish the salmon with a sprig of dill.

* Some BBQ'ers put cedar plank in water, wine or beer beforehand but then you are steaming instead of smoking. With a dry plank you actually get the smoke flavor in the salmon!
