This dessert is not only delicious but also very easy to make. The sweet and juicy pineapple is grilled over high heat and sprinkled with rum and chili powder for an extra kick. So for this BBQ dessert recipe, you only need a few ingredients. The honey-lime mascarpone is the ideal complement to the tangy flavors of the pineapple. Pour another glass of rum and your evening can't go wrong. To make this recipe, as you read above, you don't need many ingredients. What do you need?

1 whole pineapple, crown off and peel removed
5 tbsp delicious Don Papa Rum
1 tsp chili flakes

For the honey-lime mascarpone:

1 container of mascarpone (250g)
1 tbsp. honey
rasp of 1 lime, peel well clean first
1 - 2 tbsp. lime juice (or rum!)

optional: fresh mint, finely chopped

Preparation method

Place your peeled pineapple on a large sheet of aluminum foil in a baking dish and sprinkle with the chili flakes and pour the rum over it. Give it a good twist and then wrap well and tightly so that the rum cannot run out. You can leave this for as long as you like, preferably overnight.

Make sure your barbecue is at about 200°C (direct heat) when you plan to grill the pineapple. Cut the pineapple into equal slices. Now grill the pineapple for about 3-4 minutes per side, directly on the grill. Remove your grilled pineapple from the grill and place on a platter. Tuck a scoop of the honey-lime mascarpone on top of your pineapple and enjoy!
