BBQ Beef Qutab's is a delectable dish that has its origins in the rich culinary traditions of Azerbaijan. It is a flavorful and savory delicacy that offers the perfect combination of tender grilled beef and the crispness of the thin dough around it.

The secret to this dish lies in the beef marinade, which creates a deep, smoky flavor. The meat is marinated in a mixture of herbs, spices and a touch of citrus, giving it an irresistible flavor.

Thin dough sheets similar to tortillas are used for preparation. The marinated beef is then placed on the dough sheets along with other flavorful ingredients such as onion, tomato and parsley. The Qutabs are then placed on the grill, where the meat is grilled juicy and the dough takes on a delicious crispy texture.

The result is a perfect interplay of flavors and textures. The smoky and juicy flavor of the beef combines beautifully with the freshness of the vegetables and the crispness of the dough. The dish can be served as an appetizer, as part of a meal or even as a snack for a cozy barbecue evening with friends and family.

What do you need?

dough:
640 g patent flour ( plus extra for dusting)
2 tsp salt
400 ml water (at room temperature)

padding:

1 tbsp sunflower oil
2 garlic cloves, finely chopped
500 g cooked BBQ meat such as pulled beef, brisket or pulled lamb
2 medium white onions, very finely chopped
2 tbsp parsley leaves, finely chopped
1 tsp sumac
salt and freshly ground black pepper to taste

Garnish:

2 tbsp sunflower oil
200 g Greek yogurt
2 tbsp coarsely chopped flat parsley
salt and freshly ground black pepper to taste
1 tbsp sumac
50 g pomegranate seeds

Preparation method

For the dough, mix the flour and salt in a bowl. While kneading, add the water until a cohesive mass forms. Knead well again to form a dough ball and let rest in a cool place for about 30 minutes.

 

Meanwhile, prepare a BBQ with lid for direct grilling, and heat to 180°C.

Heat a skillet on the BBQ and sauté the garlic briefly in some sunflower oil. Add the remaining ingredients and sauté briefly. Remove the skillet from the heat and allow to cool. Place a cast iron plancha on the BBQ and allow to warm up. Meanwhile, divide the dough into 12 equal portions. Dust a work surface with some flour and roll out each ball of dough into a flat circle about 12 to 13 cm. Top half of each circle with some of the baked filling and fold closed to form a stuffed crescent. Repeat with the remaining dough.

 

In a bowl, mix the Greek yogurt with the chopped parsley and some salt and freshly ground black pepper to taste. Put some oil on the plancha and fry the gutabs on both sides for a few minutes until the dough is nicely browned and the filling is hot. To do so, flip them over halfway with a spatula and, if necessary, keep greasing the plancha with some oil while frying. Serve the gutabs on a platter and sprinkle them with some extra flat parsley and sumac just before eating. NuÅŸ olsun (enjoy your meal!).
