Not So Macho Nachos
Type of dish: Vegetarian
Number of persons: 4

OK people, it is up to us to counter the downward trend in the world's gender equality rankings. We are in favour of more women in key positions. As CEO, COO, CFO or as Chief Roasting Officer. That also requires a different approach to some of our dishes, but all for justice and a rise to the top 10. Drive us crazy with these cauliflower nachos.

Preparation time: 40 |

Temperature: 220° C, direct

What do you need?

1 cauliflower Bag of tortilla chips plain 200 gr Tin of black bean spread La Morena 440 gr 1 bag of grated cheddar 150 gr 4 cloves garlic 1 jalapeño pepper 2 roma tomatoes 1 red onion 1 tablespoon fresh coriander Guacamole approx. 40 gr per person 1/2 teaspoon cumin powder 1/2 teaspoon chilli powder 1/2 teaspoon smoked paprika 2 tablespoons olive oil Pepper Salt

Preparation method

Prep Heels off, trainers on. Let's go: cut the cauliflower into sweet little florets, the roma tomatoes into cubes, the garlic into fine pieces and the red onion into cosy mini cubes. Thinly slice the jalapeño pepper and finely chop the coriander. Let's burn inequality Heat your BBQ with the fire of equality to 200, no, do it right away 220 °C, that will teach them. Use a large baking dish or cast iron pan to make a statement and grease it with a little olive oil. Spread the cauliflower and garlic over the bottom of the oven dish, sprinkle the cumin, chilli and paprika over it. Show those boomers who's boss and place the dish confidently in the BBQ. Let it cook for about 10-15 minutes until the cauliflower is golden. Place tortilla chips over the cauliflower, followed by the black bean paste and top with the cheddar. Bake this for about 6-8 minutes until the cheese is completely melted. Just before serving, divide and heave the tomatoes, jalapeño, red onion, coriander and guacamole over the dish. That's it! A deliciously healthy nacho dish. And a well-deserved place among the old boys.
