Lobster Rolls

Imagine freshly steamed lobster, carefully removed from its shell and then mixed with creamy mayonnaise and lemon juice. All this is served on a crispy toasted hot dog bun and topped off with a generous dollop of melted butter and fresh chives. This is what we call a real Lobster Roll - a classic from the sea that will rock your taste buds!

What do you need?

4 lobsters

2 tablespoons of good quality mayonnaise

1 tablespoon lemon juice

salt

fresh ground pepper

6 tablespoons of melted butter

6 hot dog buns

4 tablespoons of chopped fresh chives

Lobster rolls prepared on the Bastard

Preparation method

Heat your Bastard to a temperature of 220 degrees direct. Heat the Cast Iron Fry Pan on your Bastard.
Place the lobster on a cutting board belly side down and cut in half lengthwise. Put a good knob of butter in the pan and fry the lobsters for 5 to 7 minutes until tender. Then remove the meat and cut the tails into bite-sized pieces and put them in a large bowl with the meat from the claws and legs. Whisk the mayonnaise and lemon juice in a small bowl and season with salt and pepper to taste.

Gently mix the dressing with the lobster meat and set aside. Heat a medium skillet over medium-high heat and add two tablespoons of butter. Toast the outside of the hot dog buns in the skillet until golden brown. Turn over and toast the other side. Repeat with the remaining buns. Open each bun and fill with 1/4 of the lobster salad. Drizzle each sandwich with 1 tablespoon melted butter and sprinkle with 1 tablespoon chives. Serve immediately.
