Cod is also known as skrei in the winter months, because the fish land on the Norwegian island group of Lofoten after a long journey. Critics say they taste a difference, others do not notice anything. So alternate this dish, with cod in summer and skrei in winter. The only thing you should not alternate is the CedarWood BBQPlank, this provides an extra dose of flavour in both cases.
Put the cedar wood plank in cold water for at least half an hour. In the meantime, preheat The Bastard to 200 °C.
Sprinkle the fish with salt and pepper, lay the dill partly on the cedar wood board and partly on the fish. Place lemon slices on the cod. Place the cedar wood plank on the grill of the The Bastard. Close the lid and cook for about 15 minutes. After 15 minutes, take the cedar plank off the grill.
Tip: Delicious with roasted asparagus and roast potatoes with herb cream.
