Caprese comes from the island of Capri, which is known for its beauty and great views. Then a tower is an obvious choice. We like to put this omenomenomnom traditional Italian dish in a BBQ jacket. Scan the icon!

What do you need?

- 6 cherry tomatoes - 2 large bulbs of mozzarella - 2 yellow peppers - 2 red peppers - 1 courgette - 2 tbs Pesto Genovese - Fresh basil - 1 primeval bread - Olive oil - Coarse pepper - Salt

Preparation method

Cleanliness is important in any Italian dish, so wash the vegetables. Cut the peppers into large pieces and the courgette into tight slices 1 cm thick. Also cut the mozzarella into slices: 1.5 cm. Pluck basil leaves from one of those nice fresh plants and cut primeval bread into 1.5 cm slices. Lightly grease the bread with oil and sprinkle with coarse salt. Cover the inside of the glasses with cling film so that the tower can be easily removed later on. Grill the peppers. Grill the courgette, grill the bread and since you are doing so well, grill the cherry tomatoes (or not, because you are contrary and like them cold and juicy). Cut one round out of the bread in the diameter of the bottom of the glass and put that in the glass. Then stack the mozzarella, peppers, courgettes and basil leaves alternately to form a tower in the glass. Press firmly each time. Look at it with a lot of eyes to emphasise your designer eye. Cut another round out of the bread in the diameter of the bottom of the glass. Make one for the top as well. Place the large round of bread on top. Exciting moment: turn your tower over on a pizza stone or cast-iron pan. Remove the moist slice of bread that is now on top and replace it with the dry one. Stick a toothpick in the middle. Place a cherry tomato, roasted or otherwise, on top and then let mozzarella melt at a pleasant 160 °C. Scoop the tower out of the pan or off the pizza stone with a burger flipper and serve this lookout immediately. As a finishing touch, quickly drizzle some pesto over it.
