What do you need?

150cc of apple juice

150 cc apple cider vinegar in a spray bottle

4 racks of spare ribs

Herbs:

1 tbsp soft sugar

1 tsp freshly ground lemon pepper

1 tsp sea salt

1 tsp granulated sugar

1 tsp onion powder

1 tsp garlic powder

1 tsp mustard powder

1/4 tsp smoked paprika

1/2 tsp chipotle powder

1 tsp oregano

1/2 tsp parsley

 

Sauce:

1 bottle of beer

5 tbsp granulated sugar

2 tbsp kesenjam

1 tbsp soy sauce

1 tsp worcestershire sauce

1 tbsp apple cider vinegar

1/2 onion finely chopped

1 clove of garlic finely chopped

1 tsp ginger powder

pinch of sea salt pinch

freshly ground lemon pepper

Preparation method

Mix the spices and make the spray. Deflesh the spare ribs. Coat them with olive oil, sprinkle the spices on top, but not too much! Place the spare ribs on the BBQ (indirect) for 1.5 hours, spraying every 15 minutes with the spray bottle.

After 1.5 hours, remove the spare ribs from the BBQ and wrap with aluminum foil. Spray them well before sealing and put them back on the BBQ. Start with the sauce by putting the beer and 5 tbsp. granulated sugar in a pan. Heat this and let it thicken into syrup. Add the remaining ingredients and heat to just below boiling. Mash the cherries afterwards.

After 2 hours, remove the spare ribs from the foil and place them back on the BBQ. Using a brush, spread the spareribs with the sauce. Do this 3 times in half an hour. Remove your spare ribs from the BBQ and let rest for 5 minutes.
